I have a pimento cheese recipe that I think is great!!! Take 1 large block of med. cheddar cheese, run thru food processor, add a couple heaping tablespoons of your favorite mayonnaise(enough to make the mixture creamy), 1 tablespoon of sugar or splenda, several tablespoons of milk or cream and 1 small jar of diced pimentos. Chill and enjoy on your favorite cracker of bread. Let me know how yours turns out??!!

Only difference is I use a jar of "sweet roasted peppers" which are right next to the pimentos in the store. You have to chop them up a bit, but they are so good!

Also, I don't like grating my knuckles , so I just grab one bag each of the fancy (fine) shredded and regular shredded cheddar.

YUMMY! I might make some this weekend!
